cilantro viaingrette

Yield
Makes1 cup (serving size: 1 1/2 tbsp.)
Ingredients
1/2 cup cider vinegar
1 teaspoon grated lime rind
1/4 cup lime juice
1 tablespoon honey
1/4 teaspoon sea salt
1 whole (or just a half) bundle chopped fresh cilantro
Optional: add a piece of jalepeno, serrano for some heat....
1/4 cup olive oil
Preparation
1. Whisk together first5 ingredients; then add cilantro,add oil in a slow, steady stream, whisking constantly until smooth. Whisk well before serving. I prefer to do this in a blender on low so that it is all mixed evenly, i still add oil slowly. FYI this is my recipe but i found one pretty close to it so i added their nutritional info to it because our oil was the same amount the rest was different but the oil which makes up the fat was the same. just a tip: if it is not setting up at all once all has been done. then take and add 2 TB of sour cream this will help set it up and if you use the low/nonfat stuff then you are doing great.
